Infused with homemade raspberry chilli jam and deep-fried breadcrumbed brie, this pretzel sub is a feast for the senses. 

Ingredients 

  • 1 x pretzel sub roll
  • 4 x breadcrumbed brie slices 
  • 20g pickled carrot
  • 20g pickled radish 
  • 20g pickled mooli 
  • 5g fresh mint 
  • 5g fresh coriander 
  • 30g raspberry chilli jam

Method or Assembly Order

  • Lightly warm the pretzel roll then slice lengthways
  • Spread the homemade raspberry chilli jam on the bottom of the roll 
  • Deep fry the breadcrumbed Brie in hot oil until golden brown, oozy & crispy
  • Once cooked place on to the roll
  • Place the zingy pickled veg in the roll on top of the Brie
  • Followed by the fresh vibrant herbs 
  • Top the roll

Fresh and light, this super sandwich with a twist saw inventor Harry Dempster clinch the award in the Sodiaal Cheese Category at the Sandwich & Food to Go Designer 2026 competition.

“For this brief I wanted to make the brie the absolute star of the show. Which is why it is  solely the hero ingredient in this innovative sandwich, however I also wanted to use the Brie in a slightly different cuisine/format to what you would normally see it paired with. The creaminess of the brie works perfectly with the zingy Asian flavours.”
