If Monday was a movie, it would be Blade Runner, set in Mumbai... and this would be the sandwich you need!

A remixed classic cheese toastie fusing Gouda and its Dutch roots with the colonial Dutch influence in Bombay. Smashing coriander, chillies, mint, ginger alongside crushed potatoes and the umami Chaat Masala it’s a Gouda meltastic combo. This is what India would do with Gouda...give it the chilli street-food treatment and leave your taste buds begging for more!

This recipe makes a batch!

Ingredients: 

  • 32 slices Gouda
  • 300g potatoes, peeled and diced
  • 1tsp chaat masala
  • 1/2 red pepper, finely chopped
  • 1/2 red onion, finely chopped
  • 1tsp cumin seeds
  • 8 slices sourdough bloomer
  • 100g unsalted butter
  • 100g mint leaves
  • 50g coriander leaves
  • 1tbs lemon juice
  • 2 finger green chillies 
  • 1/4 red onion, chopped
  • 1 inch ginger, chopped
  • 1 pinch of sugar

Method or Assembly Order:

  • Using a blender, make a hot mint chutney by blitzing the mint, coraiander, lemon juice, green chillies, 1/4 red onion, ginger and sugar to a thick paste. Add a little water if needed.
  • Peel, dice and boil potatoes until soft.
  • In a large bowl, crush the potatoes and then add the chaat masala, cumin seeds, red pepper and finely chopped red onion. Mix thoroughly.
  • Pop the bread on a board and butter each slice.
  • Now spread a layer of  hot mint chutney on half of the slices. Hold a little back for dipping.
  • Then on the remaining four slices, spread the potato mix.
  • Top each slice with an even layer of Gouda. Gently press the slices together i.e. hot mint chutney (with cheese) over the potato (with cheese) slice. 
  • Spread more butter on the outsides of the sandwich.
  • Heat a large lidded non-stick frying over a medium heat.
  • Toast the first sandwich with a lid on for 2 minutes until the base goes crispy, lightly tanned, with the cheese beginning to melt. Flip over and toast the other side for a couple of minutes with the lid on.
  • Repeat the process with the remaining toasties and serve hot, slicing for that cheese pull moment!
  • Serve with some of the remaining coriander, mint dipping sauce in a small bowl.
  • Devour.
